Who is Southwell Racecourse and Golf Course?

Set the in the town of Southwell near Newark and one of only six all-weather racecourse tracks in the UK, Southwell has its own unique charm and character, making it one of the premier sporting venues in the East Midlands. After previously owning the UK’s only fibresand surface All-Weather track, Southwell switched over to a Tapeta surface as of 2021. With racing on both All-Weather and Turf tracks taking place throughout the year, we are one of the country's busiest racecourses. 

Not only are we Horseracing at Southwell we are also home to Southwell Golf Club. The course has two contrasting nine holes.  The Front 9 sits within Southwell Racecourse and is characterised by a large number of water hazards. The 7th hole, a 138 yards par 3 with an island green is Southwell’s signature hole.

About the role:

You will organise and supervise all kitchen operations across the sites, maintaining high food quality and complying with hygiene regulations. Controlling costs in general and maintaining good staff relations as well as maintaining all legal and company health, safety & HACCP standards. 

You will be responsible for managing Chefs, Trainees, and Kitchen Porters, both full time, causal & agency.  The remit will encompass all food preparation across all areas for both for racedays and non racedays. 

Alongside a variable working week pattern to meet the needs of the business. Managing racedays both on site, or remotely, EVH functions & events.

Responsibilities for the successful Head Chef include (but not limited to):

  • To work closely with the Regional Head Chef regarding revenue budgets and cost targets
  • Develop and deliver an innovative food strategy across the venue's retail, hospitality and fine dining proposition.
  • To implement and adhere to the Company Food Safety Management System across all areas within remit.
  • Develop and implement strategies for procuring, storing, and distributing goods or services and maintaining stock levels
  • Manage the Kitchen staff rota across all sites in remit & deliver promptly to the staffing managers. Ensuring set cost targets are met.
  • Develop and retain a strong kitchen team, Allocate daily workload appropriately to staff, maintaining effectiveness and operational control. Including record absence/sickness of all direct reports
  • Take personal accountability for food safety compliance. Including, ensuring allergen information is displayed correctly and teams are trained and briefed accordingly.
  • Help to support the Golf Course

The person we are looking for as a Head Chef has….

  • Experience as a Senior Chef
  • Strong understanding in HACCP, nutrition & allergens
  • Good understanding of purchasing systems, technical packages & IT
  • Strong leadership skills.
  • Excellent communicator
  • Passionate about the kitchen environment and about our product
  • Works well under pressure and is organized, systematic and process driven
